Wine Chat: Introduction to Phenolic Chemistry

At Wine Chat we’ve thrown around terms like “phenological ripeness”, “ anthocyanin density”, and “polyphenolic associations” but what does any of this mean, and what does it have to do with wine. These terms all reference phenolic compounds, and these organic compounds are the of building blocks of flavour, colour and aroma in wine.
